followed by slow fermentation at a controlled temperature with daily plunging for 15-20 days

our Hawke’s Bay Chardonnay is drinking beautifully at the moment

The wine is light bodied – a ripe year showing generous red fruits and reasonably structured tannins

The vineyard was dry grown for many years but is steadily being revitalised since Brett and Elaine took over the property. The grapes for this bock come from the stonier soils of the Top block. The grapes were fermented in small batches and after fermentation was matured in 50% new French oak
