Juice from handpicked and whole bunch pressed fruit is barrel fermented in a mixture of new and second use French oak barriques. Savoury and textural intensity is introduced through the use of selected & wild yeasts, and part maturation on lees with secondary malolactic fermentation. The wine spends 11 months in barrel before minimal
